Position Title Cook

Job Summary
The Cook is a member of the kitchen operations team striving to meet established Brand standards. The Cook executes all phases of food preparation, delivery and service for residents.

Education
• Red Seal Journeyman Cook’s papers
• Advanced Food Safety certification
Experience
• Minimum of 3-5 years of operational experience in a high-volume kitchen
• Knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
JOB DUTIES
Executes Culinary Services maintaining the high-quality Culinary experience of Parkland
• Executes departmental policies, procedures and guidelines as a member of the divisional Food Services Team
• Executes food services for Breakfast, Lunch and Dinner in accordance to Brand Standards
• Executes food service for Supportive Living Lifestyle options in accordance to Brand Standards
• Executes food services for special functions such as catering and theme dinners to ensure service meets established standards
• Consistently ensures food quality, presentation, and service delivery meet established department standards; ensures meals are attractive, the correct temperature and portion size, and that service is timely
• Introduces self to new resident in the dining rooms as part of resident orientation / welcome
• Responds to resident food service needs and expectations in accordance to service expectations
• Effectively communicates and interacts with residents, family members, visitors and volunteers in a courteous and professional manner
• Assists in the orientation of new Team Members to ensure standards are met
Promotes a safety culture and adheres to all food safety standards and legislation • Takes every reasonable precaution in the circumstances to ensure the health and safety of employees and all others in the workplace, including but not limited to, providing supervision, training, information, and equipment needed for employees to do their job safely
• Ensures resident safety by following and applying all standard operational procedures, safe work practices and training provided
• Understands role and participates in the testing process for emergency response
• Maintains safety and sanitation in the department to meet legislative / organizational standards
• Adheres to both provincial and Shannex food safety standards and holds team to the same standards
• Follows safe work practices and procedures
• Ensures resident safety by following and applying all standard operational procedures, safe work practices and training provided
• Inspects equipment prior to use
• Inspects workspace regularly for hazards
• Reports hazards
• Participates in the resident and employee incident reporting and investigation process
Executes preparatory functions of the culinary department
• Executes the process for checking and receiving of deliveries and inventory control; ensures all supplies are stored, labelled, and rotated properly
• Executes the preparation processes for meal service
• Effectively uses all available resources towards satisfaction and financial goals
• Leverages menus, menu costs, recipe binders, and production sheets to guide food preparation
• Participates in the new menu development process
• Maintains appropriate records and forms in relation to the specific needs of each resident for staff reference including diet restrictions, allergies, and special requests
• Completes required documentation including inventory counts, food and equipment temperature and cleaning checklists, and security / lock-up checklists
• Reports areas and equipment in need of repair to the maintenance department
• Completes required reports and holds regular departmental meetings
